The festival of Gudi Padwa is incomplete without the traditional Puran Poli preparation. It refers to a stuffed flatbread, that uses chana dal and jaggery as a stuffing and eating this on Gudi Padwa is considered to be auspicious. Tap next to read the simplest recipe.

2 cups whole wheat flour, 2 tbsp maida, 2 tbsp oil or ghee, ½ tsp salt, water as required, 1 cup chana dal, ¾ to 1 cup jaggery, ½ tsp cardamom powder, ¼ tsp nutmeg powder, and 1 tbsp ghee

Add flour and maida in a mixing bowl. Mix well.

To this add oil or ghee and use enough water to knead a soft dough.

Wash dal and add it in pressure cooker along with 1 cup water and pressure cook for 3 whistles.

Once done, add jaggery, nutmeg powder, and ghee to it and mash well to form a smooth mixture.

Divide the dough into small balls and fill each ball with dal mixture and roll out parathas.

Heat a non-stick pan and cook the paratha from both sides using enough ghee.
